Ingredients:
o 1 lb soba or rice noodles, you can substitute spaghetti or linguini
o ¾ cup smooth peanut butter
o ½ cup unseasoned rice vinegar
o 3 tbsp plus 1 tsp white sugar
o 6 tbs soy sauce
o ¼ cup water
o 1 tbsp toasted sesame oil
o 2 tsp crushed red pepper
o 1 large garlic, clove minced
o 1 medium sized red bell pepper, seeded and cut into thin strips
o 6 limes cut into wedges
STEPS
o Cook the spaghetti or linguini according to package directions
o Combine the peanut butter, rice vinegar, sugar, soy sauce, garlic, and water and sesame oil in a large bowl
o Mix the ingredients until they are blended well and have the consistency of a cream
o Drain the spaghetti or linguini noodles
o Add the noodles and red peppers to the bowl with the sauce
o Mix the ingredients well using 2 large forks until everything is mixed well
o Place the noodles on six serving plates
o Garnish the noodles with lime wedges and serve immediately
